Ingredients:

Coffee Cake Batter:

  • 3 cups flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 cup vegetable oil
  • 2 eggs
  • 1 cup milk
  • 1 cup sugar
  • 1 tsp vanilla extract

Cinnamon Sugar Topping:

  • 1 ½ cups brown sugar
  • 2 tsp cinnamon
  • 1 stick melted unsalted butter

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F and prepare a 9”x11” casserole dish with baking spray or a light coating of butter.
  2. Make the Batter:
    • In a medium mixing bowl, combine the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, whisk together the sugar, eggs, milk, vegetable oil, and vanilla until smooth.
    • Gently fold the dry ingredients into the wet mixture until just combined.
  3. Layer the Coffee Cake:
    • Pour half of the batter into the prepared casserole dish and spread it out evenly.
    • In a separate bowl, mix together the brown sugar and cinnamon. Sprinkle half of this mixture evenly over the batter.
    • Pour the remaining batter on top and spread it out. Then, sprinkle the remaining cinnamon sugar mixture over the top layer.
  4. Add the Butter:
    • Evenly pour the melted butter over the top layer of cinnamon sugar, ensuring it covers as much as possible for that delicious, buttery crust.
  5. Bake:
