Homemade Yogurt Recipe
Ingredients:
- 1 gallon 2% milk
- ½ cup heavy cream or half & half (optional, but adds richness)
- 6 tablespoons Fage or any similar plain yogurt (5% works best)
Instructions:
- Heat the Milk: Pour the milk and cream (or half & half) into a large heavy-bottom pot. Slowly heat it, stirring occasionally, until it reaches 190°F. You’ll see small bubbles forming around the edges—just be sure not to let it boil!
- Prepare an Ice Bath: While the milk is heating, prepare an ice bath to cool it down later. Also, turn on your warming drawer or prep a cooler with a hot wet towel for incubating the yogurt later.
- Cool the Milk: Once the milk reaches 190°F, remove it from the stove and place the pot in the ice bath. Stir occasionally to cool it down to 115°F.
- Mix in the Yogurt: In a separate bowl, take 1 cup of the cooled milk and mix in 6 tablespoons of plain yogurt. Stir until smooth, then add this mixture back into the pot of milk.
- Fill Your Jars: Pour the milk mixture into your containers of choice. Sarah loves using 6-ounce baby food jars (which you can easily find on Amazon). One gallon of milk typically makes about 27 jars of yogurt.
- Incubate: Place the filled jars in your warming drawer for 9-12 hours. Alternatively, you can use a cooler with a hot wet towel and close the lid for the same amount of time.
- Chill: Once the yogurt has set, transfer the jars to the fridge to chill. Enjoy them whenever you’re ready!
